Lobster Newburg
Ingredients:
- Lobstertails, 300g
- Puff pastry, 4 cups
- Parsley, fresh, flat leaved
- Dill, fresh
- Cream, 1.5 dl
- Egg yolks, 2 large
- Butter, 50 g
- Sherry, 2 tbls
- Cayenne, 1 pinch
- Nutmeg, ground, 1 pinch
Method:
1 Lobstertails
- Bring a pot of water to a boil
- Add salt and dill
- Add lobster tails for 2 minutes
- Remove lobster tails from heat and rinse with cold water
- Cut lobster tails into small chunks and keep them in a small bowl
2 Mise en place
- Take butter out of fridge
- Remove grill from owen
- Turn on owen on 200 degrees
- Place pastries on grill
- Cut some parsley, to drizzle, into a small bowl
- Whisk cream and yolks together in a bowl
3 Sauce
- Melt butter in saucepan over low heat
- Stir in cream mixture and sherry
- Cook, stirring constantly until thickens, 5 to 8 minutes
- Do not boil
- Remove from heat
- Season with cayenne, nutmeg, salt
- Stir in lobster
- Return to low heat
- Cook gently until heated through, about 5 minutes
4 Present
- Put the grill with pastries in the warm owen
- Place the warm pastries on plates and remove their lids
- Fill pastries with lobster and sauce
- Drizzle with parsley and place the lid
