Nutty avocado and mango salad
Ingredients:
- Garlic, 1 clove, finely chopped
- Ginger, fresh, 1 thumb-sized piece, finely chopped or grated
- Chilli, 1 half red chilli, seeds removed, finely chopped
- Soy sauce 3 tbsp
- Brown sugar, 1 tbsp
- Lime juice from 2 limes
- Water, 2 tbsp
- Olive oil, 2 tbsp
- Avocado, 2 ripe avocados, cut into quarters
- Hazelnuts, 80g
- Iceberg lettuce, 1 small, shredded
- Mango, 1, julienned
- Spring onions, 3, sliced
- Coriander, fresh, handful roughly chopped
- Mint, fresh, 2-3 bushy sprigs
- Cucumber, 1 small, sliced lengthways into ribbons with a peeler
Method:
1 Hazelnuts
- Chop hazelnuts with breadknife
- Toast on pan
- Leave to cool
2 Sauce
- Add garlic, ginger, chilli, soy sauce, brown sugar, lime juice, water in small pan.
- Heat slowly, stirring, until the sugar has dissolved
- Stir in the oil.
- Remove from heat and leave to cool.
3 Salad
- Save to sprinkle some spring onions, coriander, mint
- Toss iceberg, mango, spring onions, coriander, mint into large bowl
4 Avocados
- Spread hazelnuts on plate
- Quarter avocados to wedges
- Press each wedge of avocado in the hazelnuts to coat
5 Present
- Arrange salad on large platters
- Set avocado wedges on top
- Sprinkle remaining spring onions, coriander, mint
